Method of Banana Bread Recipe
To prepare the bread preheat your oven to 325 degrees F. Grease one 9 x 5 x inch loaf pan and keep it aside. Soak the raisins in a cup of water for about 10-15 minutes until they are plumped. In the mean time grind the flax seed using a coffee or herb grinder till its in powdered form. Drain the water from the raisins, reserving the liquid. Add this liquid to the flax seed powder and mix well. Keep stirring the mixture until it thickens slightly. Than take a mixing bowl of medium size and put the mashed bananas and the flax seed mixture in it. Mix it and let it sit for a while. Than take another separate bowl and beat egg with canola oil in it until it is smooth. Add the vanilla yogurt to it and keep it aside as well. The another, third, bowl and filter the flours, oat bran, baking powder, baking soda, salt and cinnamon in it. Than add the banana mixture and the egg mixture alternately in it stirring it until the mixture is mixed well. After you are done with this softly add raisins and walnuts to the butter. Spread this butter evenly into the bread pan that you had greased earlier and bake it for 45 minutes approximately. Tent this lightly wit foil after this and bake it for another 30-35 minutes until a knife inserted in the bread comes out clean.
